With the new school year being just around the corner, I have been trying to come with creative and most importantly HEALTHY school lunches for my daughter. This school year looks a little different for most of us. Some kids are back to school in-person full time, while some only part-time in person and part-time virtual, and then some are completely virtual. Typically, it is time consuming and a little difficult in trying to come up with creative recipes and ideas to incorporate vegetables into every single meal, especially school lunches. That is why I am so excited about these Libby’s Vegetable Cups. They are so helpful in creating simple, healthy, and flavorful solutions for Back to School.

Whether it is lunchtime or you’re making a weeknight dinner, Libby’s Vegetables are perfect to keep your family happy and healthy throughout the school year. These single serve vegetable cups are perfect for adding that vegetable serving to your kids’ school lunch. There are so many easy and different ideas to incorporate these veggies in their lunch.

For example, I combined Libby’s Whole Kernel Sweet Corn Cups with some freshly chopped cucumbers and tomatoes for a quick salad for my daughter.

Another idea was mixing Libby’s Diced Carrot Cups and Libby’s Sweet Peas Cups together and serving them on the side of a sandwich.

You could also use the Libby’s Cut Green Bean Cups instead or serve it over leftover rice or pasta.

Ingredients

Option 1

  • 1 Libby’s Vegetables Whole Kernel Sweet Corn
  • 1 small Roma Tomato
  • 1 mini Cucumber

Option 2

  • 1 Libby’s Vegetables Diced Carrots 4 oz. Single Serve Cups
  • 1 Libby’s Vegetables Sweet Peas 4 oz. Single Serve Cups

Instructions

Option 1

  • Slice the mini cucumber in half and chop into bite-size pieces. Chop the Roma tomato into bite-size pieces as well.
  • Drain the water from the Libby’s Vegetables Whole Kernel Sweet Corn Single Serve Cup, and add to a small bowl with the chopped tomatoes and cucumbers and mix to combine.
  • **Add dressing over salad or on the side if desired.
  • Add the salad to your child’s lunchbox along with a variety of healthy snacks for them to enjoy.

Option 2

  • Drain the water from the Libby’s Vegetables Diced Carrots 4 oz. Single Serve Cups and the Libby’s Vegetables Sweet Peas 4 oz. Single Serve Cups.
  • Mix well to combine and serve as a delicious side dish.

      The diced carrots are great in the individual cups. How about spinach, string beans and beets in the individual cups next?
